Ember & Oak began in 2019 when master distiller Fiona Mackay converted a century-old stone bothy on the shores of Loch Tay into Scotland's smallest licensed distillery. What started as a single copper still and a notebook of botanical ideas has become one of Scotland's most celebrated craft gin operations.
Every bottle is produced in batches of no more than 400 litres. Fiona and her small team forage locally for juniper, heather flowers, rosehip and gorse blossom — botanicals that carry the character of the Highlands in every drop. They are macerated overnight in neutral grain spirit before slow distillation the following morning.
Nothing is rushed. Nothing is automated. The spirit is then diluted to bottling strength using water drawn from a private spring on the estate, and every bottle is hand-labelled, wax-sealed and numbered. When a batch sells out, it is simply gone — until the next.

Hand-foraged from the estate and surrounding glens — juniper, heather, rosehip, gorse and local herbs, selected at peak season.
Botanicals are macerated overnight then slow-distilled in our 400-litre copper pot still over a gentle open flame, preserving every nuance.
Pure water from our private Highland spring, naturally filtered through ancient granite, brings each spirit to its exact bottling strength.
Each bottle is filled, labelled, wax-sealed and numbered by hand. No two batches are identical — and that is precisely the point.
The Highland Dry is simply the best gin I have tasted at this price point. Clean, complex and beautifully balanced — my G&T has never been better.
Bought the Ember Spiced for my husband at Christmas and it has become his absolute favourite. The warmth of the spices is remarkable — you can taste the care that goes into it.
The Oak Aged Reserve is something genuinely special. I have been collecting craft gins for six years and this is one of the most distinctive drams I have encountered. Worth every penny.
